The Essence of Monjardín Chardonnay

Description

Chardonnay harvested in January, after the first snows and affected by botrytis noble. Estilo Tokaji, made from 100% chardonnay late harvested as Esencia Category. We make this wine only some vintages when climate allows the noble botrytis.

Vineyard Azqueta

It is a vineyard located in Monjardin Mountain, planted in 1995 at an altitude between 620 to 680 m. It grows chardonnay with high concentration and extraordinary acidity.

Winemaking and Aging

Fementation is done in oak barriques. When alc is 15 %, yeast naturally die leaving high concentration of natural sugar aroun 200 gr/ltr. With the great acidity and firm structure, it is very well balanced. Aged for 24 to 36 months in oak barriques, once bottled this wine can be kept for many years developing great and unique complexity.

Tasting Notes

Golden Colour, sweet notes and aromas of dry nuts. Excellent structure, high density, well balanced and very elegant. Top gastronomy.
